Bourbon Vanilla 'Grade B' is a special type of vanilla derived from the fruit of the Vanilla planifolia orchid, primarily grown in Madagascar and the surrounding islands. This grade is often referred to as "cooking vanilla." 'Grade B' means that the vanilla beans are less visually perfect than 'Grade A'—they may be split, drier, or shorter. However, this does not affect their flavor! In fact, many chefs and bakers actually prefer this grade for its intense, robust vanilla aroma.
